Mostly known as the pine mushroom, consumed by the Japanese people in a traditional way since the early times. Its unique perfume and flavor: spicy but not peppery. Its aphrodisiac reputation linked to its phallus morphology before maturity makes it a much sought after mushroom.

The pine mushroom is full of vitamins A, B group, C and plenty of minerals such as potassium, sodium, iron, copper, calcium and phosphorus.
Use and Preservation
Can be frozen (slice them before) the best way to preserve. Can also be dried but the flavor will suffer, may still add interest to culinary dishes.
Fresh matsutake mushroom is available from September through November.
